Harvested from the snowy boreal forests of Alaska, Crooked Creek Birch's small-batch birch syrup is crafted from the sap of the Alaska Birch (Betula neoalaskana). Rich, rare, and uniquely Alaskan, this syrup delivers a flavor experience unlike traditional maple syrup.
The Early Run birch syrup is light in color with a smooth sweetness and delicate notes of caramel. Its beautifully complex flavor pairs wonderfully with both savory and sweet dishes. Use it anywhere you might use maple syrup — over pancakes and waffles, in marinades and glazes, stirred into cocktails, or splashed into sparkling water for a refreshing treat.
Producing birch syrup is truly a labor of love. It takes approximately 110 gallons of birch sap to create just 1 gallon of syrup, and the harvest season lasts only about three intense weeks each spring. Every bottle reflects the care, tradition, and hard work that goes into this remarkable wild harvest.
